Chocolate Delice Recipe

Satisfy that sweet tooth with this tasty Chocolate Delice recipe from our head chef here at Cafe Carleton!


Butter 225g

Dark Chocolate 330g

Water 40g

Gelitine 10g

Egg Yolks 80g

Egg Whites 330g

Caster Sugar 160g

Chocolate Glaze

Dark Chocolate 50g

Cream 120g

Butter  20g

Golden Syrup 10g


  1. Melt butter and chocolate together
  2. Soak gelitine and dissolve in the warm chocolate mixture
  3. Add egg yolks to chocolate mixture, and combine
  4. Whisk egg whites until stiff then gradually add sugar, whisk until stiff and smooth approx 3-5 minutes
  5. Fold in the chocolate mixture and pour into mould
  6. Place in fridge and allow to set
  7. Bring the butter , cream and golden syrup
  8. Pour onto the chocolate and mix until smooth
  9. Allow to cool slighty and pour onto the cake
  10. Place in fridge and allow to set

Why not add a side of summer fruits and ice cream to complete the dish?!
